Haupia Pie

Part of the "perks" of my new job is supporting 17 other hospitals on their go-live. My first assignment was to support CPOE-Computerized Provider Order Entry in Hawaii! I've never been to Hawaii. I was thrilled about this assignment (3 months after I was hired).

When we were in Hawaii, an ED nurse at the hospital we were supporting told me to go to Ted's bakery and try their Haupia Pie - coconut with chocolate pie. On my day off the happy family headed to the North Shore in Oahu to try the famous pie. It was really yummy!!!

When we back home (Northern Cali), the girls at work were talking about our trip until we reached the topic on food-Haupia pie... Yum!

Heather found the recipe online and so I made the pie. It was yummy. I hate to brag but I think my home made Haupia is better.







For added texture on the pie, I made toasted coconut and roasted macadamia nuts.





And to celebrate Christmas, I made the Christmas tree chocolate topper.

Moving to Northern Cali made the kids go to school. It was a good thing for them. The kids' circle of friends grew and they learn to do arts and crafts, sing, pray and interact with other kids and their teachers while at school. John and Kitty (that's Kate's name in school now), are in different classrooms so they have different activities.

Presto!

I am back again! It's been a while since I blogged and I wanted to start blogging again. The blog is my diary. The days go by so fast that I need to remember what I have done or what we have done as a family to make us have a Happy Family.

You probably need to know that there have been so many changes in our lives this year-2010. Northern Cali is now our home. When we moved here, Mama gave me a Presto Griddle and it is an awesome kitchen tool! A lot food has been cooked using the handydandy Presto and this is one of them...

Presto Porkchop with Baby potatoes












Recipe:

Porkchop
Lemon pepper
Garlic powder
Olive oil

Preheat the handydandy Presto to 400 degrees.

Combine lemon pepper and garlic powder and rub it on the Pork chop. Let sit for a few mins.

Drizzle some olive oil on the handy dandy Presto. Put the Pork chop on the Presto and cook for 2 minutes. Drizzle the pork chop with olive oil and Turn. Cook for another 5-10 mins or until done depending on how thick the Porkchop.

Another rub that you can use is salt and pepper. Same direction as above.



Baby Potato

Baby Potato (purple, red, yellow)
Dry parsley
Salt
Pepper - fresh ground

Cut potato in haves. Drizzle olive oil on the handy dandy presto. Put the potatoes. Sprinkle parsley. Cook until done. May drizzle water on the potatoes.

How did it taste? It was really yummy!!!
